Swiss Alpine Macaroni with cheese, bacon, and a creamy sauce

Swiss Alpine Macaroni (Älplermagronen)

A classic Swiss dish of creamy macaroni, potatoes, cheese, and bacon, served with apple mousse for a touch of sweetness.

Ingredients
  

  • 350 g macaroni
  • 400 g potatoes
  • 3 dl (300ml) cream
  • 6 dl (600ml) vegetable stock
  • 80 g grated Gruyère cheese
  • 2 large onions
  • 4 small garlic cloves
  • 200 g bacon cubes
  • 400 g apple-mousse (store-bought or homemade)

Instructions
 

  • Gather all the ingredients
  • Dice potatoes and slice onions and garlic
  • Boil macaroni and potatoes in cream and stock for 9 minutes
  • Fry bacon, garlic and onions until golden
  • Stir Gruyère into the paste, the mix with the bacon mixture
  • Serve with apple mousse and enjoy!
